Ingredient Weight
Whole-wheat flour 170g
All-purpose flour 170g
Steel-cut oats (pre-soaked) 115g
Barley (pre-soaked) 30g
Bran 28g
Wheat germ 28g
Brown sugar 2 teaspoons
Salt 1 teaspoon
Baking soda 2 teaspoons
Buttermilk 500ml
Melted butter 45g

1. Pre-heat oven to 400F.

2. Mix the dry ingredients well.

3. Add half the buttermilk and the melted butter, continue mixing.

4. Add remaining buttermilk and mix well.

5. [optional] sprinkle (pre-soaked) pumpkin seeds on the top for decoration.

For one loaf: bake @400F for 1 hour

For 4 x280g mini loaves: bake @400F for 40 minutes

6. Put baked bread on a drying rack to cool.

Mix the dry ingredients 2: add the pre-soaked barley and oats, then slowly add the wet.
Mix well
Mini-loaves = 4 x 280g (spray the molds with oil to aid removal and to add a crispier crust)
Same ingredients make one large loaf but with longer cooking time.
Optional: add pre-soaked pumpkin seeds – you may want to pat them down a bit to stop them all falling off after baking.
Let the bread cool on a drying rack. Best eaten when cool, with ludicrous amounts of butter.
